Healthy Pancakes

When most people think of pancakes, they picture steaming stacks dripping with syrup. But a healthier version of this breakfast favorite is as easy as switching to whole grain flour, limiting added sugar, and using toppings like fresh fruit. Pancakes start with a starch-based batter that may include eggs and milk. They’re then poured onto a hot surface such as a skillet, griddle or pan and cooked until firm. The batter also contains leavening such as baking powder or baking soda, which helps the pancakes rise. Pancakes are available in both savory and sweet varieties. They can be thick or wafer-thin and can even be served as a snack, appetizer, entree or dessert.

Typically, a pancake is made from a combination of wheat flour and other grains. However, there are many gluten-free pancake recipes out there. These pancakes contain alternative flour such as almond, coconut or buckwheat that provides more fiber and nutrients than white wheat flour.

Another way to make healthy pancakes is to use a pancake mix. These mixes are often made with a range of low-glycemic flours such as millet, cassava or tiger nut, which provide a good source of dietary fiber and healthy fats. Some brands even add ingredients such as chia seeds and hemp to boost the nutritional value.

To make your own healthy pancakes, whisk together the dry ingredients in a large bowl. If desired, replace up to half of the flour with a flour made from a whole grain such as buckwheat or whole wheat. In a separate bowl, combine the wet ingredients. Make a well in the center of the dry ingredients, then add the wet and stir until just combined. It’s important not to over-mix as this will cause the batter to become tough.

Once the batter is prepared, heat a skillet or griddle over medium heat and spray with cooking spray. Use a scant 1/4 cup of the batter to form each pancake. Cook until bubbles form on the top, then flip and cook until the other side is browned. Store leftover pancakes in a sealed container and reheat as needed.

When it comes to making healthy pancakes, the most important factor is limiting added sugar. A drizzle of syrup is fine, but adding in extra sugar or whipped cream can add up quickly. Instead, naturally sweeten pancakes by incorporating berries or mashed bananas into the batter.
